Weight Watchers

My goal for the juice fast was 10 days then a diet of fruits, vegetables, nuts, and beans for 10 days.  But getting sick derailed everything.  I had to stop the juice after 4 days and I knew I just couldn’t do what I need to do to lose weight on my own.  I did Weight Watchers 10 years ago and lost 50 pounds so I know it’s a good program.  So, here we are, I joined again and decided to pay for the actual meetings for a couple months for the support and accountability.

I jumped started the program before going to meetings by starting online.  My favorite recipe is Zucchini fries.

Zucchini Fries
1 Medium Zucchini
2T Olive Oil
1/4 c. Panko
3T. Heart Smart Bisquick
Sea Salt
Cut the zucchini into sticks.  In a large bowl toss zucchini sticks in olive oil and sea salt then toss with the Bisquick and Panko.  Spray a foil lined pan with non-stick spray or spray olive oil and spread the zucchini strips in a single layer.  Bake at 375 for 30-40 minutes, turning 1/2 way through.
 
 

I wrote down all my food, drank my 60-100 ounces of water a day, ate all my fruits and vegetables, and ate no processed foods.  There were no surprises when I hopped on the scale at my first meeting but at the second meeting I was pleasantly surprised with a 4 pound weight loss!!!!  That combined with a 7 pound loss during the juice fast I was down 11 pounds in 2 1/2 weeks.  I was very happy!

 

Goals for the up coming week:

Drink 60-100 ounces of water per day

Track all my food

Eat 6-9 servings of fruits and veggies

Have Mike take my “before” picture
